Strawberry Banana Bread

This strawberry banana bread is dense, moist, and packed with ripe strawberries. I love baking banana bread because in the heat of the Texas summer, bananas are under-ripe one day, and browning the next. This bread is something I’ll eat for breakfast, dessert, or just a quick snack in the middle of the day!

🍴 Serves 12 │⏱ Prep Time: 15 Minutes │⏱ Bake Time: 1 Hour - 1 Hour 15 Minutes│⏱ Total Time: 1 hour 15 Minutes - 1 Hour 30 Minutes

Ingredients
3 Ripe Bananas
1/4 cup butter
1/4 cup sugar
1/4 cup brown sugar
2 eggs
2 tablespoons milk
1/2 teaspoon vanilla
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
One 16 ounce package fresh strawberries, chopped

Equipment
mixing bowl (2) or stand mixer
whisk or stand mixer
measuring cups
spatula
Bread pans (2) (9x5x3)

Directions

  1. Preheat oven to 350° F.

  2. Wash and chop your package of fresh strawberries. You can use frozen if chopped.

  3. In a small mixing bowl, combine 1/4 cup brown sugar, 2 cups flour, 2 teaspoons baking powder, and 1/4 teaspoon salt.

  4. In a separate, larger mixing bowl or stand mixer, mix together 1/4 cup butter and 1/4 cup sugar

  5. Add in two eggs, 2 tablespoons milk, and 1/2 teaspoon vanilla to the butter and sugar mix and mix together

  6. Add the dry ingredients to the wet ingredients

  7. In your now empty dry ingredients bowl, mash 3 ripened bananas

  8. Add the bananas to the mixer and mix until combined

  9. Fold in your chopped berries

  10. Pour into bread pans

  11. Optional - add additional berries on top of the poured mixture

  12. Bake for 45-55 minutes, until a toothpick comes out clean.

  13. Allow to cool, then slice & enjoy!


Notes

Strawberries out of season? Add in a teaspoon of cinnamon and replace the berries with fresh, chopped apples. Or, sub the berries for chocolate chips.

You may need to alter your bake time depending on your oven; when I moved into my house and started using a gas oven for the first time, I had to re-work all of my recipes! Don’t get discouraged.
