Health(ier) Peanut Butter Cups

Chocolate peanut butter cups… one of my all time favorite sweet treats. As I’ve gotten older, I try to watch my sugar intake, but I have a terrible sweet tooth. I decided to try my hand at making a healthier version of one of my favorite treats, and they are a staple in my kitchen these days. With lower sugar, extra protein and collagen, these are a no-brainer.

Ingredients
1/2 cup dark chocolate chips
2 tablespoons coconut oil
1 cup peanut butter
1/4 cup protein powder
2 tablespoons collagen peptides
Sea salt (optional)
Equipment
1 mini muffin tray
24 mini muffin silicone liners
2 microwave safe bowls

Directions
Line your mini muffin tray with 24 mini muffin silicone liners
In a microwave safe bowl, melt 1/4 cup dark chocolate chips and 1 tablespoon coconut oil for about 45 seconds, 10 seconds at a time, stirring in between.
Pour a small amount of chocolate into the muffin liners, coating the bottom and the sides
Freeze for about 3 minutes
In a microwave safe bowl, melt 1 cup peanut butter. You can use crunchy or creamy; I prefer crunchy.
Mix in 1/4 cup protein powder and 2 tablespoons collagen peptides into the peanut butter while warm. Make sure it is completely dissolved.
Pour melted peanut butter into the frozen chocolate cups. Use as much as you’d like for each cup.
Place in freezer for about 5 minutes.
In your chocolate bowl, melt the remaining 1/4 cup chocolate and 1 tablespoon coconut oil for about 45 seconds, 10 seconds at a time, stirring in between.
Top the cups with the remaining melted chocolate.
Tap the muffin tray on the counter to level the chocolate.
Optional - top with fresh sea salt.
Place into freezer for about 5 minutes

Notes
I store my peanut butter cups in a mason jar in the freezer and place a couple into the fridge when I want to eat them so they’re not as tough. These can be stored in the fridge, but I try not to go through them too quickly, so I prefer the freezer. If stored at room temperature, they can become a bit oily and lose their shape.
