Health(ier) PB&J Oatmeal Bars

As I’ve gotten older, I try to watch what I eat to keep myself healthy, but I love a classic pj&j. Creating a healthier version of the flavors was a must for me. These pb&j oatmeal bars are packed with protein, collagen, and fiber, and will leave you feeling satisfied, unlike a light granola bar. This is also a versatile, no-bake recipe and something the kiddos can get involved in as well.


🍴 20 Bars │⏱ Cook Time: ~15 Minutes │⏱ Set Time: ~30 Minutes │⏱ Total Time: ~45 Minutes

Ingredients
2 cups nut butter (I recommend crunchy peanut butter)
1/2 cup honey
1/2 cup coconut oil
2 1/2 cup rolled oats
1 cup protein powder (optional)
1/3 cup collagen peptides (optional)
1/3 cup fiber powder (optional)
1 cup jam, jelly, or preserves

Equipment
Silicone Molds
Stove top pot
Measuring Cups
Cookie scoop

Directions

  1. In a stove top pot over medium heat, mix together 2 cups nut butter, 1/2 cup honey, and 1/2 cup coconut oil.

  2. Once melted, add 1 cup protein powder, 1/3 cup collagen peptides, and 1/3 cup fiber powder (all are optional)

  3. Mix in 2 1/2 cups rolled oats

  4. Once combined, use a cookie scoop to fill your silicone molds to about halfway full and press them evenly. Or, line a baking dish with parchment paper and spread evenly to about the halfway mark.

  5. Top with your favorite jam, jelly or preserves to about 3/4 fill

  6. Place your silicone molds into the freezer for about 30 minutes to set

  7. Once set, top the frozen oatmeal bars with the remaining peanut butter oatmeal mixture and set back into the freezer to fully set

  8. Once set, remove your oatmeal bars from their silicone molds. Or, pop your mixture out of the baking tray and cut into even bars

  9. Enjoy!


Notes

To store, wrap each bar with parchment paper and keep in an air-tight container in the freezer.

I store my oatmeal bars in a air tight container in the freezer and place a couple into the fridge the night before I want to eat them so they’re not as tough. You can also pull these out of the freezer directly and allow them to come up in temperature for a few minutes prior to eating.
