Salted Caramel Turtle Cookies

Fresh-baked salted caramel turtle cookies are one of my all-time favorites. I like to whip these up as a quick holiday treat when I’ve had my fill of frosted sugar cookies or white chocolate candy cane cookies, but if I’m being honest, this is a go-to recipe for me all year around. They’re just as easy as traditional chocolate chip cookies, but seem like they took more effort or baking skill to get right.

Ingredients
1/4 cup butter, softened
1/4 cup dark brown sugar
2 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon vanilla
2 egg yolks
1/2 teaspoon baking soda
1/2 cups all purpose flour
1/4 cup chocolate chips
1 tablespoon salted caramel sauce
1/8 cup chopped pecans

Equipment
mixing bowl or stand mixer
whisk or stand mixer
measuring cups
cookie tray
cookie scoop
foil
cooling rack
spatula

Directions

  1. Preheat the oven to 350° F.

  2. In a small mixing bowl or stand mixer, whisk together 1/4 cup brown sugar and 2 tablespoons sugar

  3. Add in 2 egg yolks and mix.

  4. Add in 1/2 teaspoon salt and 1/2 teaspoon baking soda and mix

  5. Add in 1/2 teaspoon vanilla, 1/4 cup butter, and 1 tablespoon caramel sauce and mix.

  6. Add in 1/2 cup flour and mix.

  7. Fold in 1/4 cup chocolate chips and 1/8 cup chopped pecans

  8. Use a cookie scoop to scoop the cookies onto a foiled tray.

  9. Press additional chocolate chips and chopped pecans onto the cookie balls but do not smash (optional)

  10. Bake for 10 minutes.

  11. Remove from oven

  12. Tap the cookie tray onto the counter to deflate the cookies

  13. Transfer to a cooling rack or plate

  14. Drizzle salted caramel sauce over the cookies

  15. Serve and enjoy!


Notes

Tapping your cookie tray on the counter isn't required, but deflating the cookies gives them a nice wrinkly texture and helps keep them moist!

You may need to alter your bake time depending on your oven; when I moved into my house and started using a gas oven for the first time, I had to re-work all of my recipes! Don’t get discouraged.
